Ingredients

  • 1 1 medium unripe bananamedium unripe bananas
  • 4 4 eggeggs
  • ¾ cup (3 oz.) 180 ml (85 g) almond flour
  • ¾ cup 180 ml coconut milk
  • 1 tbsp 1 tbsp ground psyllium husk powder
  • 1 pinch 1 pinch salt
  • 1 tsp 1 tsp baking powder
  • ½ tsp ½ tsp vanilla extract
  • 1 tsp 1 tsp ground cinnamon
  • 2 tbsp 2 tbsp coconut oil or butter, for frying

Making low carb simple

Instructions

  1. Mix all of the ingredients together and let sit for a while.

  2. Make in a waffle maker or fry in a frying pan with coconut oil or butter.

  3. Serve with hazelnut spread or whipped coconut cream and some fresh berries, or just have them as is with melted butter. You can't go wrong!

Tips

Got extra ripe bananas? Make more waffles and freeze the leftovers for a quick and easy future morning. Wrap each pancake individually in plastic wrap for easy defrosting.

Here's how to whip coconut cream. Let a can of coconut milk sit in the refrigerator for at least 4 hours to separate the cream from the water. Open the can carefully and remove the cream part with a spoon. Place in a bowl and whisk with a hand blender for a few minutes. Save the coconut water for use in smoothies!

    Ok, I was with you up to now as these recipes look incredible, but bananas are in no way Keto friendly.

    I made these waffles for breakfast this morning and they turned out great. I used coconut cream instead of coconut milk since I already had a can of the coconut cream open. In addition to the banana, I added a few drops of banana extract to give it a bit more banana flavor. The waffles did not stick to the waffle iron, but I'm using a ceramic Belgian waffle maker and have had good experiences with waffles not sticking.

    Topped it with butter, homemade whipped cream, pecans, and ChocZero coconut syrup. I'll definitely make these again.

    Hazelnut flour can replace almond flour in a 1:1 ratio. Coconut flour is harder to substitute as it is much thirstier.

    Due to the fructose from the bananas, these are more suited for those following a liberal low carb diet rather than keto.

    Does the recipe work as well with the banana omitted. Apart from its fructose, I don't enjoy the taste of banana when it's cooked in a cake or a batter like this. I'm wondering just what the banana adds to the batter, apart from the banana flavour, that is so I've not worked out whether a substitute is required or not.

    The banana is going to add a decent amount of bulk/volume to the recipe as well as texture. You may wish to find another recipe rather than trying to substitute or make this recipe work for you.

    I made this followed the directions but added a dash of nutmeg and 1/2 teaspoon of banana extract to make it more banana flavored. I made them in a muffin maker due to not having a good pan for waffles or waffle iron. They came out so tasty they were like the frozen muffin tops at the store. Everyone loved them which in our house is nothing shy of a miracle. Very soft like banana nut bread :)

    I love these! I have made them several times and they’re the only keto friendly waffle (still only 4 net carbs per waffle, even with the banana) I have found that actually tastes like a waffle. The first time they were perfect. However I have had an issue in the last couple batches with the waffle being not fully cooked inside- any thoughts on how to fix this? Cooking longer has just led to burned outside, still wet inside.

    I made these and they were delicious. I had me with a couple rasher of bacon but next time will try berries and cream. I followed the recipe and had no problems and they cooked beautifully in my waffle maker. I will freeze the extras I made but will try leaving the mixture in the fridge and making them fresh as I need them.

    I tried making these in a skillet and it does not work. You have to use a waffle iron otherwise they are soggy in the middle and perfect on the outside. I tried making them super thin and they were still kinda soggy. Will not make again until I have a waffle iron.

    If you put a lid on while it cooks on one side it will make your life easier at the time to flip then you can take it off. :) I had trouble flipping them when I tried the pancake recipe

    Probably shouldn't complain about the one, singular banana (25 net carbs) spread out over 8 servings of these pancakes. So unless you intend to sit and eat the entire 8 servings, I wouldn't consider it an issue.

    Very good, nice sweeteness and subtle taste of banana. Substituted almond flour with half a cup of coconut flour, worked well. After 40 days of strict keto theese taste sweet to me without adding sweetener. Will make theese again!

    The picture looked yummy. But the waffles were not a hit! Perhaps my waffle-maker wasn't up to the task. As pancakes they were fine, but hardly flavourful, I'm afraid.

    We would not recommend cooking these in an oven. However, they can be reheated in a toaster oven!

    You may want to try using less coconut milk. They may have been too thin for pancakes.

    In order for a recipe to be keto, it needs to have specific percentages of fat and protein. This recipe only has 5g protein. If you have it with some sausage or bacon, it could make a well rounded keto meal! You can read more about this in footnote 3 at this link:

    It is supposed to be thick, but if you find that it's too thick, you might try adding a little more coconut milk.

    I make these in my 5minute Chef griddle, so don't flip them til they are nearly done, to brown the top more. I am not keeping bananas around so I used 1/4 cup of applesauce. If you let the batter sit too long, like in the fridge til the next day, it gets really thick. I would only let it sit for 15 minutes to a half hour. You also have to scrape down the sides of your bowl to prevent an unusable crusty mess collecting on the sides.

    Hi Lauren. Low-calorie is a different diet altogether as keto does follow low calorie as well as low carb and sugar. This just states low calorie, not keto

    Why do some recipes have grams in brackets and they do not correspond to the mls? Grams and mls weigh the same, it is very confusing. example are the banana waffles recipe....

    90 ml (45 g) almond flour

    Grams are a unit of weight measurement where milliliters are a unit of volume measurement. In some cases, they may be equal but not always; it depends on the density of what you're measuring. Just as an example, if you had the same volume of bricks and feathers, the bricks would weigh far more than the feathers.
