Ready to have your mind blown by the most delicious, and easy sweet pickle recipe EVER?!?! Did you know that you can whip up a batch of sweet refrigerator pickles in a few mins, and they will be ready to eat right away! Okay, there may be like 30 – 45 minutes of letting them shrink down, and do their delicious thang, but after that they are READY to be devoured. And beware… They are so delicious you might be able to eat a whole jar in one sitting! Not that I have done that… wink!
So I discovered this amazing recipe after a beautiful neighbor of mine, gave me a jar of her sweet delicious pickles. And I just had to have the recipe to make loads more, or to feed my new pickle addiction!
Besides being an amazing pickle maker… my neighbor is amazing and super creative, and makes and sells the cutest embroidery art. DELICIOUS EASY SWEET PICKLE INGREDIENTS:
VEGGIES:
- 7 cups Pickling Cucumbers Thinly Sliced
- 1 large Onion Thinly Sliced
- 2 large Peppers Thinly Sliced (any color of Peppers works)
LIQUID:
- 1 Cup Vinegar
- 2 Cups Sugar
- 1 Tablespoon Salt
- 1 Tablespoon Celery Seeds
EQUIPMENT NEEDED:
- Mandoline Slicer
- Large Glass Jar – to mix it all together in.
- Large Mixing Spoon
- Jars – to store your sweet pickles in!
DIRECTIONS TO MAKE DELICIOUS EASY SWEET PICKLES:
Step 1: Slice up the Veggies. If you have a mandoline slicer this task is super quick and easy. But please be careful… I once almost lost a finger on one of these suckers. Always use the slicing guard!! I used the 2 mm setting on my mandoline slicer.

Step 2: Slice up the onions, and peppers. You can add as many onions, and peppers as you desire. All the veggies are super delicious soaked in this sweet pickle juice.
Step 3: Put all your Veggies in a large container.
Step 4: Add all the ingredients under the heading “liquid” (vinegar, sugar, salt, and celery seeds) into a sauce pan, and bring to a boil.
Step 5: Pour the boiling hot liquid into the container with the sliced veggies.
NOTE: It will look like there is not enough liquid, but this is when the magic happens!!
Step 6: Let your veggie concoction sit on the counter, and give it a stir every 15 minutes, until the liquid reaches the top of the veggies! It’s MAGIC! The rising liquid will be complete in about 3 stirs!
This is how your liquid will rise with every stir. It took me 45 minutes to get them all covered in the sweet pickle liquid. My mouth is watering right now… Oh, Yummm!
Step 7: Eat them all….. Lol, or put your delicious sweet pickles into some cute jars, and refrigerate! Or even give them away as gifts, and share the sweet pickle love!
